Visit the Future of Food stand at this year's Borderless Tastes!

The Laboratory for the Future of Food - Bio/n invites you to a presentation of its activities and a tasting of products. Bio/n operates at the intersection of Latin and Slavic culinary traditions of the two Goric regions and six agricultural axes - Adriatic, Karst, Vipava, Soča, Brda, and Po valley. Based on a rich gastronomic heritage and the latest scientific findings, the local community explores ways of producing food that are more environmentally friendly, healthier, and tastier, while combining traditional knowledge with high-tech approaches. 

Over the past two years, we have focused on fermentation, lyophilization, distillation, preparing herbal tinctures, kombucha, fermenting vegetables, brewing beer, and exploring mushrooms and biopolymers from kombucha and mycelia. We developed our own technological equipment, learned about biopolymers and emerging biotechnological processes in lectures, and organized exhibitions of artists engaged in new ways of coexisting with non-human organisms. 

The event is an opportunity to taste the results of our practical research and to discover Bio/n as a hub of creative ideas for food in the future.
