Sirkus: The Beer Tamer and the Magic of Acidity! After the enchantment of Christmas, the Sirkus big top comes back to life for a bold, technical, and deeply sensory appointment. 

On Friday, January 30th, 2026, at 8:00 PM, prepare to cross the threshold into a world of unconventional fermentations and vibrant flavors. 

Guest of Honor: Eugenio Signoroni Guiding us through this special evening will be a true "tamer" of the industry: Eugenio Signoroni. Curator of Slow Food’s Birre d’Italia guide and an authoritative voice in gastronomic culture, Eugenio will lead us on a journey to discover Sour Beers, exploring acidity in all its forms, nuances, and secrets. 

The Heart of the Evening: Acidity in All Its Forms This won't be a simple tasting, but a stage where the beers themselves "take the floor."
