A journey into tradition: 4th meeting of the cycle of cookery courses

Wednesday 19th March from 6.30 to 8.30 p.m.  Poguojki: food made with love Cooking is about memory, identity and sharing.

In this spirit, the Invito Association, together with the Nediške Doline Pro Loco, invites you to participate in the new cycle of cooking courses ‘Poguojki: food made with love’, dedicated to the rediscovery of culinary traditions as a factor of identity.

Theme of the evening: ‘Fire between tradition and modernity - The barbecue technique’. On this special evening we will explore the world of barbecue cooking, learning the basic techniques for preparing meat, lighting the charcoal, controlling the temperature and cooking times.

The protagonists of the course will be: Pork ribs, slow cooked to obtain soft and juicy meat. Pulled pork, carefully prepared to obtain the characteristic shredded texture. Stokia, a traditional dish that involves browning bacon and garlic, deglazed with vinegar, to which tegoline (a type of pasta) and blanched and mashed potatoes are added, and left to flavour for a few minutes.

The experience will actively involve the participants, who will be able to try their hand at shredding the coppa and the pork shoulder, thus getting to the heart of the barbecue technique. The protagonists of the kitchen: Federico Sturam: passionate about barbecues and good food, after having taken several cooking courses he decided to open his own restaurant, transforming his passion into a profession.

Elena Cosgnach: a highly experienced cook, she has worked for years in the kitchen of the family restaurant in Oculis and in a rotisserie, refining her culinary art. The tavern at Cascina has a long family tradition: once the stable of Federico's grandparents, it was transformed into a restaurant in the early 1990s by Drio Pittoni and Adriano Iurman, then taken over by Specogna Valdo, and the business closed in 2009.

In 2019 Federico decided to bring it back to life, starting a new culinary adventure. The evening's dishes will be accompanied by wines selected by the Flaibani winery, and the winemaker will be present to guide participants in discovering the best pairings. Don't miss this opportunity to immerse yourself in the world of barbecues, between tradition and innovation, and discover the charm of an ancient technique that continues to evolve.
